Ingredients:
3/8 cup olive oil
5 ozs pancetta, diced
2 cloves garlic, minced
3/4 cup walnuts, chopped
1 1/2 ozs bread crumbs
1/2 lb pasta
2 tsp parsley, chopped
Directions:
Put water in the pasta pot and put it on to boil. When it comes to a
boil, add the pasta and cook until the pasta is al dente.
Meanwhile, put a large nonstick skillet on over medium heat, add 1/8 cup
olive oil and the pancetta and simmer until the pancetta is lightly
browned.
Add the garlic, walnuts and breadcrumbs and cook for about 5 minutes,
stirring occasionally. Add more of the olive oil a bit at a time.
When the pasta is cooked, drain it and add it to the skillet with a
little of the pasta water.
Stir thoroughly and serve, garnished with the parsley.
