Curried Chicken Salad

We came across this salad in a deli in Key West, FL and enjoyed it so much we recreated it at home.
 

  Servings: 2

Ingredients:
3 Cups cooked chicken, diced

1/2 cup celery, diced

1/2 cup cashews

1/3 cup golden raisins

1 cup seedless grapes (green, red or purple, or a mixture), cut in 1/2

Dressing

1 cup nonfat plain yogurt

1/2 cup low fat mayonnaise

1 teaspoon curry powder (test for taste - you may prefer more)

11 ounces mango chutney

Directions:
Combine the dressing ingredients and taste - you may want a bit more curry powder.
Combine the dry ingredients and mix. Add the dressing. If the mixture seems too dry, add more yogurt.
