Yorkshire Pudding If we ever failed
to produce this side at Christmas our sons would leave. |

4 Yield: 6 to 9 Prime Rib and Yorkshire Pudding has been the standard Christmas dinner at the Hendersons’ for years. We always buy a three rib roast, small end, and try to buy extra suet to ensure that there is enough fat to make the Yorkshire Puddings.Ingredients: 1 cup all-purpose flour One half teaspoon salt 1 cup milk Two eggs Directions: 30 minutes before the prime rib roast is done prepare the Yorkshire pudding. Mix all of the Yorkshire pudding ingredients with a hand beater just until smooth . To cook Yorkshire pudding, spoon 1 tablespoon of the drippings from a prime rib roast into each of 12 muffin cups. Heat the oven to 425°. Put the muffin tins in the oven to get them nice and hot but it should only take one or two minutes . Spoon the Yorkshire pudding batter into each muffin cup, then return the tin to the oven . Yorkshire puddings should rise smartly, and only take about five minutes to cook. Serving Suggestions: Serve with prime rib. |
