Our Favorite Coffee Cake

We've been making this coffee cake for more years than we can remember.  It is moist and tasty, without being too sweet.


Servings: 4

1 1/2 cups all-purpose flour
3/4 cup sugar
2 1/2 teaspoons baking powder
3/4 teaspoon salt
1/4 cup shortening
3/4 cup milk
1 each egg

1/3 cup brown sugar, packed
1/4 cup all-purpose flour
1/2 teaspoon cinnamon
3 Tablespoons firm butter

Heat oven to 375 degrees.
Grease round layer pan, 9 x 1 1/2" or square pan, 8x8x2 or 9x9x2 inches.
Blend all ingredients except topping ingredients.
Beat vigorously 1/2 minute.
Spread in pan.
Mix the topping ingredients until crumbly.
Sprinkle over batter.
Bake 25-30 minutes or until wooden pick inserted in center comes out clean.
Serve warm.
Note: I sometimes add chopped walnuts to the topping for variety.
