Cajun Shrimp With Potatoes

We had this dish at a local seafood restaurant and liked it so well we recreated it at home.


Yield: 4

One quarter cup chopped onion
2 tablespoons vegetable oil
2 tablespoons green onion chopped
2 tablespoons chopped celery
4 medium potatoes peeled and sliced
1 teaspoon salt
2 teaspoons Cajun seasoning
1/2 teaspoon pepper
1 pound uncooked medium shrimp peeled and deveined
1/2 cup fresh basil leaves shredded
1/4 cup cooked bacon crumbled

Sauté the onions, celery, and potatoes in the oil until the potatoes are browned.
Add the salt, Cajun seasoning and pepper.
Add the shrimp and bacon, stirring and making sure that the shrimp turns a light pink, but do not overcook.
Add the shredded basil.
